Eggplant First

Confession Tuesday.

I have never, ever, ever bought or cooked an eggplant in my entire life.

There I said it.

I feel sooooo much better now.

Well until recently when I found this recipe from Weight Watchers. It sounded good. Seemed easy enough and was good for you!

Grilled Eggplant, Tomato and Feta Stacks

Eggplant slices are brushed with a lemon-herb mixture, grilled and then topped 
with juicy tomatoes and salty feta. Great hot or at room temperature.

Ingredients
1 Tbsp fresh lemon juice
1 Tbsp olive oil, extra virgin
1 Tbsp fresh oregano, leaves (plus more for garnish)
1/4 tsp minced garlic, very finely minced
3/4 tsp kosher salt, divided (or to taste)
1/8 tsp black pepper, freshly ground (or to taste)
1 large uncooked eggplant(s), trimmed, sliced into twelve 1/2-in rounds
2 spray(s) cooking spray
2 large fresh tomato(es), ends trimmed, cut into six slices each
3/4 cup(s) crumbled feta cheese

Instructions
1. Preheat grill to medium-high.
2. Meanwhile, in a small bowl, combine lemon juice, oil, oregano, garlic and 1/4 
teaspoon salt; set aside for flavors to blend.
3. Coat eggplant with cooking spray; sprinkle with remaining 1/2 teaspoon salt 
and pepper.
4. Grill eggplant until lightly charred and tender, turning as needed, about 8 
to 10 minutes.
5. Flip eggplant over and brush with lemon mixture; top each with 1 slice tomato 
and 1 tablespoon feta. Cover grill and cook until tomato and feta soften 
slightly, about 1 minute.
6. Remove to a serving platter and garnish with addition oregano leaves, if 
desired. Yields 1 eggplant stack per serving.

Those who know me well are mumbling right now, "She ate tomatoes?"
Yep, sure did.

I don't mind cooked tomatoes, just not cold raw ones. Why? not sure, just don't. And honestly the squishy seeds part if the part I have the most trouble with - cooked or not.

I cut and prepared the eggplant and tomatoes as instructed and let the grill do the work.


Let them cool for a few seconds...


And ate them up! Okay not all of them, just three!
